Dining at Ensue is a uniquely exciting and memorable experience. Every meal is prepared with a focus on pure natural flavors and ingredients, in an elegant yet uncomplicated style with the artful cooking techniques of Chef Kostow and the team. Much as the flavors of China are rooted in both tradition, and constant innovation; so, too, is the menu at Ensue is a living creation.
One of the most pressing responsibilities we have in our generation is leading the way forward for a cleaner planet through sustainable agriculture. At Ensue we feel compelled to be leaders within this movement and to show that world class food can be produced ina respectful and sustainable way. At it’s core, this is the nature of Chef Christopher Kostow’s Napa Valley cuisine, which informs every element of Ensue; the idea that a simple vegetable can, in its purest form, hold a remarkable flavor that by itself can be the star of a dish. In addition, we believe that China has the same potential as any other great agricultural country of providing the best ingredients to locally produced cuisine, but this potential has been long neglected. Ensue is proud to seek these ingredients and showcase the beauty and delicacy of each ingredient by using the most cutting-edge western cooking techniques.
Christopher Kostow was born and raised in Chicago, Illinois and trained across Europe and North America. Upon helming his first kitchen at Chez TJ, in San Francisco, Chef Kostow was awarded two Michelin stars. He earned his third star in 2011 at The Restaurant at Meadowood in Napa Valley, California, becoming the youngest American-born chef to earn the culinary world’s highest honor. Chef Kostow was also awarded Best Chef: West by the prestigious James Beard Foundation, has appeared multiple times on top television programs, and his first book, “A New Napa Cuisine”, was awarded Book of the Year in 2015 by the International Association of Culinary Professionals.
Ensue’s kitchen, under the leadership of Executive Chef Kostow, proudly features top talents from the global culinary scene. Head Chef Miles Pundsack-Poe leads daily operations, assisted by a team of dynamic Chinese and foreign chefs, they showcase the very best of South China with every dish.
The guest experience at Ensue and Alcove is led by General Manager Anthony Trova and a dynamic team of industry professionals. Ensue was designed by Chris Shao (Chris Shao Studios, New York), blending elements of Chinese luxury with the natural beauty of Napa Valley. The dining area of Ensue is conceptualized to evoke a feeling of the California mountains at twilight. The beating heart of the restaurant, the kitchen, also was designed to feature windows with abundant sunlight, so that the entire culinary process, like the food itself, is abundantly creative, ethereal, and inspired.
Ensue consists of 2 floors. The first floor is a fine dining restaurant with the capacity of 40 seats. The mezzanine floor is The Alcove featuring cocktails and whiskeys with the capacity of 50 guests.
In addition, for larger groups, corporate dinners, or guests requiring a measure of privacy or discretion, Ensue features two sumptuous private dining rooms, each with capacity of between 10 to 12. Each privatedining room at Ensue is immaculately decorated and designed for the most discerning of guests.
Alcove is the bar at Ensue, and, like the restaurant, seamlessly blends comfort with quality. Alcove is a hideaway; a place to find peace and a sense of home. A world class restaurant deserves a world class bar, and Alcove brings a level of sophistication and elegance to South China. With a painstakingly curated inventory, expertly crafted cocktails, and an emphasis on local products, a drink at Alcove is the perfect accompaniment to the breathtaking skyline view, either as a follow-up to a dinner at Ensue, or as a stand-alone experience.
