3 Easy Pie Recipes for Your Potluck

It’s fall and fall is a great time to gather with friends and family to share a meal. Instead of putting all the pressure on the host (or hostess), asking everyone to bring a dish is a great way to make a dinner more collaborative. Baking some fall pies should be on the top of your list.

Few things are as distinctive as the feeling of a cozy home in fall and the smell of something baking in the oven. Here we recommend the most classic but easy recipes – pumpkin pie and apple crumble pie – that are guaranteed to get your friends asking you for more.

a. Ingredients:

  1. 1 ½ cups Member’s Mark low Gluten Flour+ extra for rolling
  2. 1 cup (8 ounces) unsalted, very cold President Butter, cut into ½ inch cubes
  3. 1 teaspoon salt
  4. 1 teaspoon sugar
  5. 6-8 tablespoons ice water

b. Steps:

Mix flour, salt, and sugar in a large bowl or food processor.

Add butter. Half at a time, blending with a food processor or manually until largest pieces of butter are about the size of peas.

Slowly add cold water, about ¼ cup at first and then a tablespoon at a time until dough is crumbly but can hold together if you pinch some together.

Empty mix onto a dry, flat surface and separate into two piles. Knead each pile until they form disks. Don’t over-knead to make sure your crust is nice and flaky at the end.

Sprinkle each disk with a little flour, wrap in plastic, and refrigerate for one hour (or up to two days).

Remove dough from refrigerator and let sit for a few minutes to soften the dough.

Roll out the dough on a floured surface until it’s in a 12inch (30cm) circle, about 1/8 inch (3mm) thick. If it’s too sticky while rolling out, dust with more flour.

Place pie crust on pie pan. Add filling.

Optional: place second rolled out dough on top. Trim excess crust and press edges of top and bottom together before using a fork to add a design around the edge. Score the top of the pie with four 2-inch (6cm) cuts so that steam can escape from pie while cooking.

2 Easiest Pumpkin Pie

a. Ingredients:

  1. ¾ cup sugar
  2. 1 ½ teaspoons pumpkin pie spice
  3. ½ teaspoon salt
  4. 1 can (15 oz) pumpkin (or fresh pumpkin puree)
  5. 1 ¼ cups evaporated milk or half and half
  6. 2 eggs, beaten
  7. Pie crust

Toppings:

b. Steps:

Heat oven to 425°F. In large mixing bowl, mix ingredients together and pour into pie crust.

Bake 15 minutes. Reduce temperature to 350°F and continuing baking for 40-50 minutes (or until knife inserted near the middle of the pie comes out clean).

Cool for 2 hours. Top with whipped cream or vanilla ice cream. Serve or store in refrigerator until serving time.

3 Perfect Apple Crumble Pie

a. Ingredients:

Topping:

  1. 1 cup flour
  2. ½ cup brown sugar
  3. ½ cup white sugar
  4. 1 teaspoon ground cinnamon
  5. ½ cup butter
  6. Optional: Lakeland U.H.T Whipping Cream; Member’s Mark Vanilla Ice Cream

Filling:

  1. 8 Member’s Mark Gansu Apples
  2. ½ tablespoon lemon juice
  3. 1/3 cup white sugar
  4. 3 tablespoons all-purpose flour
  5. 1 teaspoon ground cinnamon
  6. 1/8 teaspoon ground nutmeg

b. Steps:

Preheat oven to 450°F.

Topping: combine all ingredients using fork until completely mixed and looks crumbly.

Peel, core, and slice apples into about 1/8 inch (3mm) thick. Toss apple slices with sugar, lemon juice, nutmeg, cinnamon, and flour.

Prepare pie crust in pie pan and layer the apple slices until very full. Pour left over juice over the apples. Finish off the pie with the topping and pack it over the apple slices.

Place pie on cookie sheet (to catch any dripping) and place in oven.

Bake for 15 minutes, reduce heat to 350°F, and bake for an additional 45-55 minutes. Poke through the center to make sure the apples are soft all the way through.

Serve room temperature or warm with a scoop of vanilla ice cream on top.
